If you drove past Pilot Knob and 155th Street West today, you probably did a double take. That little coffee stand wasn't there yesterday, and now it is. Welcome to how 7 Brew does things.

The Arkansas-based drive-thru coffee chain just had their building "drop" in Apple Valley, which is a pretty wild process to watch. The whole structure gets built off-site, trucked over, and then craned onto the prepared foundation in a single day. Crews handle the finishing touches after — landscaping, utilities, drive-thru striping, all of it. That modular approach is how 7 Brew plans to open 60+ Twin Cities locations by 2030 without spending two years on every build.

WHERE IT'S GOING

The Apple Valley 7 Brew is landing at 155th Street West and Pilot Knob Road, just south of HealthPartners. It's a drive-thru-only concept, so there's no indoor seating. Two lanes, quick in and out.

For anyone who hasn't seen one before, 7 Brew is built for speed. The menu goes way past coffee. They do teas, milkshakes, custom energy drinks, and a pretty endless lineup of sodas. You can check out 7 Brew's official site for the full rundown, but the whole brand leans into customization and tens of thousands of drink combinations, which is the kind of number that sounds made up until you see how many syrups, milks, and mix-ins are on the menu.

WHY APPLE VALLEY IS ON THE SHORTLIST

Apple Valley is one of the first four Twin Cities locations, alongside Vadnais Heights, Minnetonka, and Maplewood. Vadnais Heights is already up and running as the first Minnesota metro stand, with the other three following close behind.

The long-term vision is a lot bigger. According to KSTP's reporting, franchisee Rick Kueber (CEO of Kueber Coffee Minnesota) is aiming for 60+ metro locations by 2030. That would put 7 Brew in basically every suburban corridor from Lakeville to Blaine. Apple Valley's spot on Pilot Knob puts it right in the path of morning commuters heading up to 35E and the workers flowing into the HealthPartners campus next door.

HOW THE "BUILDING DROP" ACTUALLY WORKS

This part is genuinely fun to watch. 7 Brew doesn't build stick-framed coffee shops the way most chains do. Each 510-square-foot stand is fabricated in a factory, trucked to the site fully assembled, and set onto a prepared concrete foundation by a crane. The whole drop takes a single day.

Then the crews come in to finish everything that can't travel on a flatbed. Landscaping, utility hookups, signage, menu boards, drive-thru lane striping. A few weeks of finish work, and they're pouring coffee.

The advantages are obvious:

  • Speed. Site-to-opening in a fraction of the time.

  • Consistency. Every 7 Brew looks and operates the same way.

  • Scalability. When your building arrives pre-built, 60 locations in five years stops sounding crazy.

WHAT IT MEANS FOR APPLE VALLEY

This isn't a sit-down cafe. There's no "grab a seat and work on your laptop" angle here. It's built for drive-thru only, which means the fit is commuters, parents doing school runs, and anyone who wants a specialty drink without parking and going inside.

It's also part of a broader wave of new food and drink spots landing in Apple Valley right now. Chicken Salad Chick is opening Minnesota's first location just up the road at 14658 Cedar Ave, and Moe's Southwest Grill just got its first approval to open on 150th Street's restaurant row. WHAT WE STILL DON'T KNOW

There's been some back and forth online about exact opening dates. The confirmed info right now: location, concept, late June target, and that it's part of the first Twin Cities wave. I'll post the official grand opening date the second it drops.
