
Tapestry Coffee Opens 2nd Lakeville Shop at 160th & Cedar

Lakeville's Donut Star shut down in May. Today the same owners open the doors again, only now it says Tapestry Coffee on the sign.
The new shop sits at 7656 160th St. W., right at the corner of 160th and Cedar Avenue. It's Tapestry's second Lakeville location, and it's about as close to the Apple Valley border as you can get.
The Donut Star Twist
Here's the part that surprised a lot of people. Scott and Kiley Van Daalen and co-owner Brady Heerema, the trio behind Tapestry, also owned Donut Star. They bought it last year, then closed both the Burnsville and Lakeville shops in May.
So the closure and the opening are connected, but not in the way you'd guess. They already held the lease on the 160th Street building. When Donut Star wound down, they had a good space and no tenant.
Scott Van Daalen told Sun Thisweek they'd looked at that exact building three years ago, back before Donut Star ever moved in. They just liked it that much.
Yes, You Can Still Get a Donut
This is the question everybody asked when Donut Star closed, and the answer is better than expected.
Tapestry is partnering with La Boulangerie Marguerite, a St. Paul bakery. They'll bring in croissants, danishes, muffins, scones and donuts Monday through Saturday.
Different donuts, sure. But donuts.
What's Actually Inside
The menu is the same one you'd get at the downtown Lakeville shop on Holyoke Avenue, house-made syrups and all. Same espresso drinks, same cold brew.
The room is different. Three walls of windows means a lot of light, which is a real change from the tucked-in downtown spot. And there's a parking lot.
That last one matters more than it sounds. The downtown store has always been a street-parking situation. Van Daalen singled out the new lot as one of the things he's most excited about, mostly because it makes the shop easier to just stop at.
Tapestry's original Lakeville shop took over the longtime Mainstreet Coffee space in the heart of downtown. It's grown enough over the years that expansion started to feel less like a gamble and more like a next step. The Cedar Avenue corridor gave them a way to reach people who were never going to detour into downtown for a latte, part of a stretch of Cedar the city has big plans for.
The Coffee Race on Cedar
Tapestry is not the only one who noticed that corridor. 7 Brew Coffee is going into Marketplace at Cedar, a few minutes up the road, and Chipotle and Panera are coming to Lakeville too.
The difference is scale. 7 Brew is a drive-thru chain. Tapestry roasts its own beans in Lakeville and sells them online. It's the same story as downtown Lakeville getting its first bike shop: a local owner betting on a local room.

The shop is open daily, 7 a.m. to 3 p.m.
Van Daalen has said they're planning food trucks and a celebration in the parking lot for the first weekend. The official grand opening comes later, once the staff has a few weeks under their belt.
The Bottom Line
If you live in southern Lakeville or northern Apple Valley, this is now probably your closest independent coffee shop, and it has parking. That's the whole pitch.
If you were sad about Donut Star, go anyway. The donuts moved, they didn't disappear.
