Chipotle, Panera & More Coming to Lakeville (2026)

Chipotle, Panera & More Coming to Lakeville (2026)

July 1, 2026|6 min read|By South Metro Scoop

TLDR

  • Lakeville's getting a second Chipotle — a permit's been pulled for a spot on Heritage Drive.

  • A new building will hold both Panera Bread and Leeann Chin.

  • Pizza Ranch is expanding its FunZone Arcade on Kenyon Avenue.

  • A keepsake ultrasound studio just opened, and a longtime pediatric group moved into town.

  • Lakeville has issued about $151 million in building permits this year — way up from last year.

  • The city ranks #2 in the whole Twin Cities for new home permits (and was #1 in April).

Lakeville's growing fast, and the city's June business update makes that pretty clear. New restaurants, new family spots, a bigger arcade, and a record pile of building permits. Here's the quick rundown on what's coming to town — and what's already open.

The food wave: a second Chipotle, plus Panera and Leeann Chin

Lakeville's about to become a two-Chipotle town. The city issued a building permit for a new Chipotle — a 2,372-square-foot spot at 20267 Heritage Drive. That's on top of the existing one over on Kenwood Trail, so the other side of town is getting its own burrito fix.

A separate permit went out for a new multi-tenant building set to hold two more names you'll know — Panera Bread and Leeann Chin. That's soup, sandwiches, and orange chicken all in one building. Right now the nearest Panera is over in Burnsville, so this one's a real win for Lakeville.

One thing to keep in mind: no opening dates have been announced for any of these. A building permit means construction can start, not that the doors are open. But the plans are official now, so it's really just a matter of time.

Pizza Ranch's arcade is getting bigger

If your kids love the FunZone Arcade at Pizza Ranch, good news. The city approved an addition that pushes the arcade into the tenant space next door at 16995 Kenyon Avenue.

More games, more room. Pizza Ranch has been a Lakeville family stop since 2011, so it's a nice upgrade to a spot a lot of folks already know.

Two new spots for growing families

Two more businesses are new to town, both aimed at families. Lumina Ultrasound Boutique opened at 20855 Kensington Boulevard, Suite 113. It's not a medical clinic — it's a keepsake studio for expecting parents, with 2D, 3D, 4D, and HD ultrasound "experiences," gender reveals, and a big projected screen so the whole family can watch baby move. Think spa day meets sonogram.

Metropolitan Pediatrics also set up shop at 20520 Keokuk Avenue, Suite 200. This one's a relocation — the longtime group moved its Burnsville office to Lakeville. It's an established practice, over 50 years old with 21 pediatricians, and it's open seven days a week, including Sunday mornings. They even offer free expectant-parent visits. Both spots are open now.

The big projects already in motion

A few of Lakeville's bigger developments moved forward too — and we've already covered most of these in depth.

The City Council signed off on a 75,000-square-foot Domino's supply chain distribution center, built by Scannell Properties in the Interstate South Logistics Park. The plan includes 19 dock doors and room for a future 25,000-square-foot expansion down the road. We broke down the full Domino's plan here, and Sun ThisWeek has the council details.

Over at the corner of 179th and Cedar, the Marketplace at Cedar development keeps filling in. A 7 Brew coffee stand and a Valvoline oil change shop both got their approvals recently, adding to a corner that's already stacked with tenants.

And the city broke ground on a brand-new fire station on Dodd Boulevard — the one that'll replace two older stations with a single modern facility. We covered that project when it first got the green light.

Lakeville's building like crazy

Here's the number that ties it all together. Through May, Lakeville has issued building permits worth about $151 million. Last year at this same point? Around $127 million. That's a big jump.

The townhome boom is real. The city issued 129 townhome permits so far this year, way up from 80 at this time last year. A big chunk of that is Wildwood, a brand-new rental community at 16160 Kendale Drive. It mixes upscale rental townhomes with single-family rental homes, plus a clubhouse and pool, and it's set to open this summer with rents running from about $1,895 to $4,500 a month.

The kicker: according to Housing First Minnesota, Lakeville ranks #2 in the entire Twin Cities for year-to-date home building permits — and it was #1 in the whole metro back in April. For a suburb, that's a lot of hammers swinging.

The Bottom Line

Lakeville's in full growth mode. If you eat out, take the kids to the arcade, or just like knowing what's going up around town, there's a lot in the pipeline. Keep an eye on Heritage Drive and the Cedar Avenue corridor — that's where most of the new stuff is landing. Want to track it yourself? The city keeps a live development map online, and posts year-to-date permit totals too.

It'll share a new multi-tenant building with Leeann Chin. The city issued the permit in its June update but hasn't announced an opening date.

What's happening with Pizza Ranch?
The FunZone Arcade at 16995 Kenyon Avenue is expanding into the space next door. More games, more room on the way.

Is Metropolitan Pediatrics new to Lakeville?
It moved here from Burnsville. The clinic's now at 20520 Keokuk Avenue, Suite 200, and it's open seven days a week, including Sunday mornings.

Why is so much being built in Lakeville right now?
Lakeville is one of the fastest-growing cities in the metro. It ranks #2 in the Twin Cities for new home permits this year, and more rooftops bring more restaurants, shops, and services.
